Tarta z migdałami i karmelem
forma na tartę

Ciasto
140 g mąki
1 łyżka cukru
115 g zimnego masła (pokrojonego w kostkę)
1 łyżka lodowatej wody schłodzonej w zamrażarce
0.5 łyżeczki ekstraktu waniliowego
1 kropla ekstraktu migdałowego

W misce wymieszać łyżką mąkę z cukrem. Dodać masło i zagnieść ręcznie ciasto, pod koniec dodając wodę i ekstra ekstrakty. Uformować kulę, spłaszczyć ją, zawinąć w woreczek i zostawić w lodówce na co najmniej 30 minut. Następnie wyjąć ciasto i wylepić nim formę do tarty zwracając uwagę na to, żeby nie zostawiać żadnych przerw czy dziur w cieście.  Zapomniałam schłodzić ciasto w formie, o czym pisze David ;) Teraz powinno się umieścić ciasto w zamrażarce na parę minut ;) Gotową formę wstawić n 15-20 minut (lub dłużej) do piekarnika nagrzanego do 190ºC (wyjąć kiedy ciasto zacznie przybierać złotawy kolor... a to ciasto to prawdziwy skarb! ;) )
W międzyczasie przygotować polewę migdałową:

Migdały i karmel
250 ml śmietanki (36%)
200 g cukru
szczypta soli
80 g płatków migdałowych
1 kropla ekstraktu migdałowego
2 łyżki Amaretto lub Grand Marnier

Do średniej wielkości garnka wlać śmietankę, dodać cukier i sól. Całość podgrzać, doprowadzając do wrzenia. Kiedy zacznie się tworzyć piana, zdjąć garnek z ognia, wmieszać migdały wraz z ekstraktem i likierem. Gotową masę wylać na gotowe ciasto i wstawić z powrotem do piekarnika na 30-35 minut. Po pierwszych 10 minutach należy sprawdzić czy na powierzchni nie tworzą się karmelowe grudki - na pewno będą się tworzyć, dlatego należy lekko rozbić powierzchnię ciasta nożem (niejako mieszając i stukając ostrzem o karmelowe skupiska). Operację należy powtórzyć co najmniej 2 razy w czasie pieczenia ciasta. Upieczoną tartę ostrożnie wyjąć z piekarnika (karmel może pryskać oraz pobrudzić, gdyż osadza się na brzegach formy).

Tarta jest bardzo smaczna (nawet tuż po wyjęciu z piekarnika i wystygnięciu), ale zasada drugiego dnia dodatkowo uszlachetnia wrażenia smakowe ;) Tartę należy przechowywać w temperaturze pokojowej, owiniętą w folię. Niełatwo się kroi, ale jest mało wymagająca w transporcie i lubi pudełka na lunch ;)

Almond caramel tart
round tart baking form

The recipe comes from David and I am in love with it :)

Dough
140 g flour
1 tbs sugar
115 g chilled unsalted butter, cut into little cubes
1 tbs ice water (chilled in the freezer)
0.5 tsp vanilla extrac
1 drop of almond extract

In a bowl mix the flour and sugar by hand. Add the butter and mix until the butter is in very small pieces. It should be pretty well-integrated with no large visible chunks. Add the water and extracts and mix until the dough is smooth and comes together. Press into a flat disk, wrap in plastic and chill thoroughly (at least 30 minutes in the fridge). To put the pastry in the pan, let the dough come to room temperature and press the dough into a tart shell using your hand. Try to get the dough relatively flat on the bottom, and push it evenly up the sides with your thumbs. But once again, it doesn’t need to be perfect, but you do want to make sure the sides don’t collapse. Put the tart shell in the freezer and chill thoroughly.
To bake the shell, preheat the oven to 190ºC. Bake the shell for 20-30 minutes, until it is set and light golden-brown.

Filling
250 ml heavy cream (36%)
200 g sugar
a pinch of salt
80 g silvered almonds
1 drop of almond extract
2 tsp Grand Marnier or Amaretto

Heat the cream, sugar, and salt in a big, wide heavy-duty pot  until it begins to boil. Continue to cook and when it starts to foam up, remove it from the heat and stir in the almonds, the almond extract, and the liquor.
Scrape the filling into the shell.
Make sure there’s no clumps or piles of almonds and that everything is evenly distributed, then put the filled tart shell into the oven.
After the first 10 minutes, check the tart.
Take a knife and break up the surface of the tart. Doing this is very important since it avoids the top of the tart getting that 'corn flaky‘ look. Be sure to give the filling a good series of ‘taps’—not enough to break the tart shell pastry underneath, but it’s important to break up the surface crust that’s forming.

Continue to cook, checking the tart every 5-8 minutes, and break up any dry crust that may be forming, getting less aggressive as the filling sets up. As it begins to caramelize, stop tapping it and let the tart do its thing.
Remove the tart from the oven when the filling is the color of coffee with a light touch of cream in it and there are no large pockets of gooey white filling, about 30 minutes. Let the tart cool a few minutes on a cooling rack.

The tart is crazy delicious :) Once made, the tart should be kept at room temperature. If not eaten the same day, wrap in plastic wrap. The tart is best the first day but can be kept for up to 4 days. Not easy to be cut, but quite easy to transport -  seems to like lunch boxes ;)

  2. O nie, jaka wspaniała tarta! Uwielbiam i karmel i migdały więc czuję, że szybko by zniknęła. Od niedawna uprawiam też jogę, więc może warto by było sięgnąć po książkę? :-)
